Moroccan Stew


Here’s how you make this delicious Moroccan Stew:


1 tbsp vegetable oil
2 white onions (chopped)
2 leeks (chopped)
4 garlic cloves (chopped)
2 tbsp cumin
2 tbsp turmeric
1 tbsp cinnamon
1 tbsp chilli flakes
500g (2.5 cups) cherry tomatoes (cooked down) (tins of tomatoes will suffice)
200g (1 cup) red lentils
2 red peppers
800g (4 cups) chickpeas
100g mixed nuts
1 orange (chopped)
2 sweet potatoes (chopped)
500ml (2.5 cups) water
small bunch coriander (cilantro)

Coriander (Cilantro)


1 Fry the onions and leeks until they’re soft
2 Add the garlic cloves & fry until soft
3 Add the spices, stir through so everything is mixed together
4 Add the tomatoes, stir through
5 Add the lentils, the peppers, the chickpeas, the nuts, the orange
6 Stir everything together & cook for 10 minutes so the flavours are mixing together
7 Add the water & let the stew simmer until the sweet potatoes are soft
8 Mix in the cilantro
9 Serve with couscous, coconut yoghurt & a cilantro garnish.
